I’ve been blogging over at Simple Healthy Kitchen (quick and easy healthy recipes) for a few years now and like so many others, I was curious to check out what the buzz about the Instant Pot was all about.
I have to admit, I was a bit intimidated by the Instant Pot at first, just the thought of pressure cooking kind of freaked me out! The first time I used the Instant Pot it made all kinds of hissing noises and sent steam shooting into the air! (I now know this is perfectly normal!) I was convinced it was going to explode, or somehow send the contents of what I was cooking straight up to the ceiling of my kitchen. I’m happy to say that none of the above happened! And now that I’ve been cooking with the Instant Pot for a bit, I can’t even imagine my kitchen without one!
I’m loving the hands-free cooking that comes along with using an Instant Pot. Basically you set it and forget it. Come back after the cooking cycle is complete to a healthy home cooked meal. So simple! Meats come out perfectly juicy and tender, you can cook a perfect batch of steel cut oats without even having to be in the kitchen! Soups and Stews and things that normally would take a majority of the day to cook in a slow-cooker or on the stove-top are done much quicker.
When you can’t find what you want…Create it! How Healthy Instant Pot Recipes came to be.
Being new to the Instant Pot/Pressure cooking I was looking for some good resources to find healthy, easy to follow recipes so I could become more comfortable with cooking in the Instant Pot.
I wanted to be able to find a resource that would let me search for healthy recipes by recipe type (appetizers, main dishes, dessert etc.) as well as by ingredient (chicken, beef, seafood etc.) and by special diet types ( like Vegetarian, Vegan, Paleo, Keto etc.) and be in a place where I could go back to over and over for new ideas.
I found great information in cookbooks ( I now own A LOT! ), Pinterest, “round-up” type posts and various other places, however I didn’t find an online resource that would fit the bill of being organized by categories and meal type etc. AND HEALTHY!
So I decided to create one!

New to using an Instant Pot? Check out “Instant Pot 101” for a quick start guide. Starting with how to set up your Instant Pot as well as doing the “Water Test” (an important first step as you unpack your new Instant Pot).
You’ll also find “ How-To” tips for using your Instant Pot ( things like “Natural Pressure Release vs. Manual release”, “ How to clean your Instant Pot” and “How much liquid do you need to have in your Instant Pot” and “Adjustments to cooking times for different altitudes”) .

Adjusting Recipe Cook Time if you live above 2000 ft. Altitude:
I live in Seattle, WA and the recipes on this site are tested and cook times set for altitudes up to 2000 ft. If you live at a higher altitude than 2000 ft. you’ll need to make some adjustments to the cook time. You can find the specific adjustments for your altitude and well as instruction on how to set the Ultra and Duo models to automatically adjust on this post Instant Pot High Altitude Cooking Time Adjustments
